Making a grand entrance today, give a big hand to the Rockin Talkin Tacos. This south western entree consist of flavorful ground sirloin cooked to perfection with delicious Anaheim peppers, chili power, cumin and a host of other robust spices that are sure to entice your palate.

Ingredients for Rockin Talkin Tacos

  • 1 1/2 pounds of ground beef (sirloin)
  • 1 medium yellow onion diced
  • 3 medium Anaheim peppers charred & diced
  • 1 medium yellow bell pepper diced
  • 1 tablespoon of crushed garlic
  • 4 medium heirloom tomatoes dices
  • 1/2 cup of mild chili powder
  • 1/2 cup of cumin
  • 1 tablespoon of cayenne pepper
  • 1 tablespoon of smoked paprika
  • 1/3 cup of beef stock
  • salt to taste
  • 2 cups of mexican blend cheese
  • 2 cups of red leaf lettuce shredded
  • 8-10 yellow corn or wheat tortillas

Ingredients for Guacamole

  • 5 large avocados
  • 3 small tomatoes chopped
  • 1 bunch of cilantro chopped
  • 1 small white onion diced
  • 1 tablespoon of lemon juice
  • salt to taste

Ingredients for garnish

  • 2-3 limes quartered
  • 6 medium radish thinly sliced
  • 1/2 bunch of cilantro chopped
  • 2 large tomatoes chopped


Clean, rinse and drain all produce before use.

♦ Chef Ann’s Notes:

If you are unsure about picking perfect avocados, just ask your produce man they are normally very helpful.

For those of you who do not like beef you may substitute with a meat of your choice, however you may want to switch out one or two of the spices that I use in this recipe.

You may also opt out on the red leaf lettuce and use shredded cabbage, red or green.

Preparation before cooking

Place Anaheim peppers under the broiler or on a grill to get a nice charred burn effect. Then remove peppers and place in a brown paper bag allowing them to sweat for about 10 to 15 minutes. When the peppers have cooled down you can now dice and set aside until you add them to the ground sirloin.

Preparation while cooking   (guacamole)

Slice avocados in half discard seeds and place avocados in a large bowl. With a fork mash until you have a smooth consistency then add cilantro, white onion, tomatoes, lemon juice and salt to taste.  You may also use a food processor.


Place ground sirloin in a large skillet at medium high heat for about 10 minutes and stir frequently.  Add cayenne pepper, garlic, yellow onion, Anaheim peppers, yellow diced bell pepper, chili powder, cumin, paprika, tomatoes and salt to taste. Continue to stir making sure that all ingredients blends well. After 10 minutes add beef stock and stir.

Lower heat and allow mixture to simmer for 15 minutes then remove from heat.

Whole wheat tortilla on an iron comal

Heat another skillet or comal at medium high heat. You may add a pinch of preferred cooking oil if desired and place tortillas one or two at a time depending on how large your skillet is.

Less or more than a minute at a time on both sides; what ever your desired firmness for tortillas. Now remove from heat load on the goodness but don’t forget to garnish.

You are now ready to serve up some Rockin Talkin Tacos!

Another wonderful cheese that you might want to try for this recipe is “Enchilado” the brand is Cacique. It is sure to add a distinctive taste to an already savory entree.

Helpful information

The use of a comal for heating your tortillas is the perfect cooking tool. They can be found in most Mexican markets, better department stores and even some Walmart stores.

For those that are gluten intolerant, I recommend the Mission brand of yellow corn tortillas. O grams of Cholesterol, naturally low fat and a good source of fiber. source: calorieking.com
